Chicken Posole

Ingredients

Instructions

  1. Sauté the onion in oil until soft. Add the chicken, spices, stock and water, season to taste and bring to a boil. Simmer until the chicken is done.
  2. Remove from heat, then remove the chicken and shred. Discard the skin and bones.
  3. Return the chicken to the pot, add the hominy and simmer 15 minutes. Skim any fat.
  4. Plate, garnish with the tomatoes, radishes, scallions, cilantro and tortilla chips, and serve.
